Taguella

The loaf is buried directly in embers and scorching sand to bake — no oven — then dug up and brushed clean before it's torn apart to scoop up sauce.

Taguella is a thick round bread of wheat flour dough buried under hot sand and glowing charcoal until it bakes through, then dug up, brushed of ash, and torn into pieces to scoop up a meat or vegetable sauce.

Why it's made this way: It's the traditional staple bread of Saharan communities across southern Algeria, prized for needing no oven — just fire, sand, and patience — making it ideal for desert travel and oasis life.
