The shrimp farms that supply this dish sit in brackish coastal ponds so central to Khulna's economy that the government gave the region's bagda shrimp its own protected geographical status.
Farmed tiger prawns are stir-fried in a thick, spiced gravy of onion, turmeric, and chili until the shells turn deep red and the meat soaks up the seasoning. Khulna's coastal ponds produce a major share of the country's bagda shrimp supply, and the curry is a fixture on menus throughout the division.
Why it's made this way: Khulna's brackish-water shrimp farms made bagda tiger prawn its defining export and local ingredient — a status formalized when Bangladesh filed for the shrimp's geographical indication in 2019 and issued its GI certificate in 2022, cementing its permanent place on regional menus.
