Jessore and neighboring Faridpur are the two districts most associated with date-palm jaggery across all of Bengal — a reputation for quality, not just quantity, that predates Bangladesh's independence by generations.
Rice-flour cakes and pithas are sweetened with khejur gur, a date-palm jaggery boiled down from sap tapped through the cool winter months, giving them a deep caramel flavor unlike plain sugar. Jessore, in Khulna division, is considered the country's historic center of jaggery production, and winter street stalls sell the pithas made from it fresh.
Why it's made this way: Jessore's date-palm groves made it one of old Bengal's most celebrated jaggery-producing districts, and the winter tapping season still shapes the local sweets calendar around fresh khejur gur today.
