The neighborhood's chaap stalls barely stir until sundown — Nazira Bazar's alleys only fill with smoke and crowds after dark, running straight through to the pre-dawn sehri rush during Ramadan.

Bone-in beef ribs are pounded thin, marinated in a yogurt-and-spice paste, and pan-seared on a flat griddle until the edges char. Nazira Bazar's crowded lanes are lined with stalls frying it fresh alongside kebabs and biryani, sold to a steady stream of late-night customers.

Why it's made this way: Nazira Bazar takes its name from the Mughal-era Nazir officials who once lived there, and its night market of biryani, chaap, and kebab shops has turned the alley into Old Dhaka's best-known address for after-dark eating.
