It's officially protected: Bangladesh granted Bogra's curd its own geographical indication tag on June 26, 2023, putting it in the same legal category as products like Darjeeling tea.
Milk is slow-boiled down, sweetened, and set in shallow clay pots until it firms into a dense, caramel-toned curd with a thin sweet crust on top. Sherpur upazila in Bogra district is considered its birthplace, and stacks of it are sold from sweet shops across the district and shipped out to the rest of the country.
Why it's made this way: Bogra's curd-makers built a reputation precise enough to earn the product legal geographical indication status in 2023, cementing what was already a nationwide byword for the best doi in Bangladesh.
