Kalai Roti

The dough is never rolled with a pin — vendors flatten each disc by hand into a roti far thicker and larger than an ordinary wheat one, a technique passed down through generations of local cooks.

Black gram (mashkalai) and rice are ground into flour, mixed into a firm dough, and hand-flattened into thick, hearty discs cooked on a clay griddle until browned. Roadside stalls across Rajshahi and Chapainawabganj sell it hot with mashed eggplant, dried chili, and fried meat on the side.

Why it's made this way: The dish traces back to Chapainawabganj's countryside in Rajshahi, once a favored retreat of the Nawabs of Murshidabad, and it remains as central to the region's daily eating as rice and lentils, with its popularity now spreading well beyond Rajshahi to Dhaka.
