Bumthang's Emmental and Gouda exist because a Swiss cheesemaker settled in the valley decades ago and built a dairy there — making high-Himalayan Bhutan one of the few places in Asia producing genuine alpine-style cheese.

Made in small batches at Bumthang's Swiss-founded farm using imported cheesemaking equipment, the cheese is aged into wheels of Emmental and Gouda rather than the soft datshi found elsewhere in Bhutan. Wedges are sold at the farm shop near Jakar and served at guesthouses across the valley.

Why it's made this way: A Swiss settler's dairy, planted in Bumthang decades ago, took root because the valley's cool climate and dairy-herding tradition were already suited to cheesemaking, giving central Bhutan a cheese style found nowhere else in the country.
