Unlike Bhutan's meat-filled momo, this dumpling is stuffed with turnip greens, cottage cheese, and amaranth seeds — and it's genuinely hard to find on a menu outside this one valley.

Buckwheat dough is hand-pinched into small pouches and packed with sautéed turnip greens, cottage cheese, butter, and chili, then steamed in stacked baskets until tender. It's the centerpiece dish of Haa's Lomba harvest festival and New Year celebrations, served hot straight from the steamer at farmhouse gatherings.

Why it's made this way: Haa's high, cold valley grows buckwheat and turnips far more reliably than rice, so the harvest-festival food built up around what actually came out of the ground — and unlike momo, which spread across Bhutan along Tibetan trade routes, hoentay stayed rooted in this one valley.
