It's less a garnish than a required side — Lhotshampa households consider a plate of rice and lentils genuinely incomplete without a spoonful of this pickle next to it.

Roasted or boiled tomatoes are pounded with chili, garlic, coriander, and a squeeze of lime into a tangy, chunky relish. It's spooned onto nearly every meal in southern Bhutan's Nepali-descended households, alongside dal-bhat, and sold in small jars at market stalls in towns like Gelephu and Samtse.

Why it's made this way: Achar is a cornerstone of the Lhotshampa cuisine that Nepali-descended settlers brought into Bhutan's warmer southern belt, where tomatoes and chilies grow easily and a sharp pickle helps cut through a rice-and-lentil diet.
