The name is usually traced to a dare to diners, 'piquen si son machos', roughly 'pick at it if you're tough enough', a nod to the fiery locoto peppers on top.
A mountain of French fries is piled with grilled beef strips, sausage, tomato, onion, boiled egg and locoto peppers. Street stalls in Cochabamba serve it on large shared platters, often for two or more people.
Why it's made this way: Pique macho was created and remains most strongly associated with Cochabamba, Bolivia's self-declared culinary capital.
