Cochabamba's version is traditionally dusted with powdered sugar as well as served with spicy sauce, giving the same fritter both a sweet and savory bite.

Mashed potato is molded around a filling of minced beef, olives and hard-boiled egg, then breaded and deep-fried. Street carts in Cochabamba sell them hot, dusted with sugar and paired with a fiery salsa.

Why it's made this way: The sweet-and-savory presentation is specific to Cochabamba's street-cart tradition, setting it apart from similar stuffed-potato dishes elsewhere in the Andes.
