Despite the name pointing to Tucumán, Argentina, the deep-fried version sold on street corners is a distinctly La Paz breakfast food, eaten with a ladle of yellow chili sauce poured right into the pastry.
A half-moon pastry stuffed with seasoned beef or chicken, potato, peas and egg is deep-fried until golden and blistered. Street vendors in La Paz sell them hot each morning, splitting them open to fill with salsa.
