Majadito Camba

🍚
Photo coming soon

A fried egg and fried plantain are placed on top as standard garnish, a combination locals call "a la cruceña" found on nearly every rice dish in the department.

Rice is cooked down with shredded dried beef, onion and cumin until sticky, then topped with a fried egg and sweet plantain. Street stalls across Santa Cruz serve it as a filling lunch plate.

Why it's made this way: Majadito reflects Santa Cruz's lowland "camba" cuisine, built around cattle ranching and rice farming rather than the potato-based highland diet.
