Sonso de Yuca

The mixture is molded onto a stick and grilled over coals like a kebab, giving what is essentially mashed yuca and cheese a smoky, charred crust.

Boiled yuca is mashed with cheese, formed around a wooden skewer and grilled until the outside chars. Santa Cruz street vendors sell them hot off small charcoal grills.

Why it's made this way: Like cuñapé, sonso relies on Santa Cruz's cassava-farming lowlands, making it a regional item not found in Bolivia's highland cities.
