Cajá trees fruit so heavily and briefly that Bahian vendors freeze the tart pulp in bulk just to keep this juice on menus year-round.
A tangy, bright-orange juice blended from the pulp of the cajá (yellow mombin) fruit with ice and sugar, sold from beach kiosks and juice carts across Salvador. It's thicker and sourer than most tropical juices, closer to a smoothie.
Why it's made this way: Cajá trees grow wild across Bahia's coastal lowlands, and the fruit rarely travels well, so the juice stays a distinctly local, hyper-regional specialty rather than a nationwide export.
