Vendors fan the charcoal by hand table-side, cooking each skewer to order rather than grilling in batches.

Satay is small pieces of marinated meat — usually chicken or beef — grilled on skewers over charcoal and served with thick peanut sauce, cucumber, and rice cakes (ketupat). It's a fixture of Brunei's Gadong night market.

Why it's made this way: Skewering and grilling meat over open charcoal let night-market vendors cook large batches quickly to order, which is why satay became a staple of open-air markets across the wider Malay world.
