The egg on top goes in raw and cooks entirely from the clay pot's residual heat after it comes out of the oven.

Bulgarian white brined cheese is baked in an individual clay pot with tomatoes, roasted peppers, and a cracked egg until bubbling, then served straight from the pot with crusty bread for scooping. It's a fixture of taverns and market-adjacent grills around Sofia.

Why it's made this way: The dish is named for the Shopi, the ethnographic community native to the Sofia region, whose cuisine leans on sirene cheese, peppers, and tomatoes more than anywhere else in Bulgaria.
