This grilled-pork breakfast is so popular that the best-known stalls routinely sell out before 9am.

Pork is marinated in garlic, soy sauce, coconut milk, and palm sugar, then grilled slowly over charcoal and sliced thin over a plate of rice. It's served with pickled carrots and daikon, a light pork broth, and a sweet-sour dipping sauce, almost always eaten before mid-morning.

Why it's made this way: As a cheap, portable, high-energy meal that could be grilled quickly at dawn and eaten before the day's work began, it became the default breakfast at markets and roadside stalls across the country.
