Kampong Cham sits directly on the Mekong, and fishing remains such a significant local trade that the day's catch often goes straight from net to riverside grill within the same afternoon.

Whole freshwater fish pulled from the Mekong is scored, salted, and grilled whole over charcoal until the skin blisters, then served with rice, fresh herbs, and a lime-chili dipping sauce. Riverside food stalls near Kampong Cham's bamboo bridge and markets sell it fresh most evenings.
