Grilled Squid with Kampot Pepper

The squid is often still fresh off the boat when it hits the grill, brushed with nothing more than fish sauce, lime, and crushed Kampot pepper.

Whole squid, split and scored, is grilled quickly over charcoal and finished with a brush of fish sauce, lime juice, and crushed green Kampot peppercorns. Vendors along Kep's waterfront and crab market sell it straight off the grill with a side of pepper-lime dipping sauce.

Why it's made this way: With fishing boats unloading directly at Kep's shorefront market every morning, grilling the catch simply and letting Kampot's peppercorns do the seasoning became the area's default way to cook seafood.
