Mondulkiri sits at a lower elevation than most classic coffee highlands, yet its volcanic red soil and cool microclimate let Bunong farmers grow real Arabica beans there anyway alongside Robusta — an unusual pairing for Cambodia's mostly lowland coffee scene.

Arabica and Robusta beans are grown on Mondulkiri's volcanic highland farms, largely by Bunong indigenous growers, and roasted into a mild, chocolate-toned brew. Market stalls and small roadside cafes around Sen Monorom serve it hot or over ice alongside more familiar Khmer coffee.

Why it's made this way: Mondulkiri's red volcanic soil and cool highland climate set it apart from Cambodia's mostly lowland coffee growing, and Bunong farmers have built the province's reputation as the country's emerging specialty coffee region.
