Mondulkiri's plateau sits at roughly 800 metres, making it one of the coolest parts of Cambodia and one of the few places in the country where coffee is grown commercially.

Arabica and Robusta beans are grown on Mondulkiri's volcanic highland farms, largely by Bunong indigenous growers, and roasted into a mild, chocolate-toned brew. Market stalls and small roadside cafes around Sen Monorom serve it hot or over ice alongside more familiar Khmer coffee.

Why it's made this way: Mondulkiri's red volcanic soil and cool highland climate set it apart from Cambodia's mostly lowland coffee growing, and Bunong farmers have built the province's reputation as the country's emerging specialty coffee region.
