The best-known stalls only fire up their pans for a few hours a day — locals know to show up at Phsar Leu market in the late afternoon or the cakes are gone.

A batter of rice flour is studded with chopped garlic chives, pressed into small discs, and deep-fried until the edges turn blistered and crisp. Vendors sell them hot in paper at the front of Siem Reap's Phsar Leu market, dunked in a sweet-tangy chili-vinegar sauce.
