Nkui

Its signature sliminess doesn't come from okra at all — it's pressed from the inner bark of the triumfetta shrub, which yields a viscous liquid once soaked and squeezed.

Bark from the triumfetta tree is soaked and kneaded in water until it releases a thick, gluey liquid, then simmered with smoked fish, meat and spices into a stretchy, mucilaginous sauce, spooned over corn fufu.

Why it's made this way: Nkui is one of the clearest markers of Bamiléké cuisine in the West region, prized at ceremonies for a texture unlike any other Cameroonian sauce.
