Njama njama is the Cameroonian name for garden huckleberry — the same leafy green known as 'kumbi' in Fulfulde on the nearby Mambila highlands, tracing one plant across several Grassfields food cultures.

Dried corn is ground and cooked into a soft, stretchy dough called fufu corn, served alongside a quick stir-fry of chopped huckleberry (njama njama) leaves with tomato, onion and palm oil. It's the everyday lunch plate across Bamenda and the wider Northwest.

Why it's made this way: Bamenda-grown njama njama is widely regarded as the best-tasting variety in Cameroon, and the pairing with corn fufu is the region's default comfort meal.
