Njama njama is huckleberry (Solanum scabrum), a leafy relative of the nightshades, cooked only briefly so the leaves keep their deep green colour.

Dried corn is ground and cooked into a soft, stretchy dough called fufu corn, served alongside a quick stir-fry of chopped huckleberry (njama njama) leaves with tomato, onion and palm oil. It's the everyday lunch plate across Bamenda and the wider Northwest.

Why it's made this way: Njama njama grows abundantly in the cool Bamenda highlands, and its pairing with corn fufu is the region's default comfort meal.
