Kilishi

Properly dried and kept away from humidity, kilishi can last more than six months without refrigeration — a Sahel-born answer to preserving meat through the dry season.

Thin slices of beef are coated in a spiced peanut paste, then sun-dried and lightly smoked until dense and chewy. Vendors in Garoua's markets stack it in slabs, cutting off pieces to sell by weight.

Why it's made this way: The recipe traces back to Hausa and Fulani traders across the Sahel, and it remains one of the most portable, long-lasting street snacks in northern Cameroon.
