Alberta's bison herds descend from animals nearly wiped out in the 1800s and saved partly by ranchers near Wainwright, Alberta, who kept one of the last major herds alive.
Lean ground bison is formed into patties, grilled, and served on a bun with caramelized onion and cheese at prairie food trucks and farmers' market stands. It's leaner and slightly sweeter than a beef burger.
Why it's made this way: Bison ranching has deep roots on Alberta's prairies, tied to both Indigenous history and the province's conservation-ranching industry.
