Many of Canada's plains bison descend from a herd bought from Montana ranchers in 1907 and shipped to Elk Island and Wainwright in Alberta, when the species had nearly vanished.

Lean ground bison is formed into patties, grilled, and served on a bun with caramelized onion and cheese at prairie food trucks and farmers' market stands. It's leaner and slightly sweeter than a beef burger.

Why it's made this way: Bison ranching has deep roots on Alberta's prairies, tied to both Indigenous history and the province's conservation-ranching industry.
