The Vancouver cart that invented it started in 2005 with a single grill and became so popular it eventually opened a permanent restaurant, an almost unheard-of leap for a hot dog stand.

A grilled or deep-fried hot dog is topped with distinctly Japanese garnishes like grated daikon, nori, teriyaki sauce, or Japanese mayo instead of ketchup and mustard. Downtown Vancouver street carts sell them to lunchtime crowds.

Why it's made this way: The dish was invented on a specific downtown Vancouver street corner, blending the North American street-cart format with Japanese flavors, and hasn't spread much beyond the city.
