Fiddleheads are only edible for about two weeks each spring, before the ostrich fern unfurls, so New Brunswick roadside pickers race the calendar every year to sell them fresh.

Tightly coiled ostrich fern shoots are boiled or sautéed with butter and garlic, sold fresh in bags or served as a quick side at roadside food stands each spring. Locals treat the brief season almost like a festival.

Why it's made this way: New Brunswick's river floodplains produce some of the country's largest wild ostrich fern harvests, making the province Canada's fiddlehead capital.
