Despite the name, it has nothing to do with fries and cheese curds — this Acadian poutine is a football-sized potato dumpling with a pork filling hidden in the center, boiled for hours.
Grated raw and mashed potato is formed around a ball of seasoned salt pork, then boiled for two to three hours until the dumpling turns translucent. Acadian community kitchens and roadside stands in New Brunswick sell it hot with molasses or brown sugar on top.
