Cod was so central to Newfoundland's economy for 500 years that the 1992 collapse of the cod fishery is still remembered as one of the largest industrial layoffs in Canadian history, putting 30,000 people out of work overnight.
Thick fillets of Atlantic cod are battered and deep-fried until crisp, served with a heap of fries and often a side of tangy dressing and mushy peas. Chip shops in St. John's and outport towns serve it as the default local takeout meal.
Why it's made this way: Cod fishing built Newfoundland's entire colonial economy and culture, making this simple fried-fish plate the island's most defining street food.
