In December 2015 Halifax regional council voted to make the donair the city's official food.
Spiced beef is cooked on a vertical rotisserie, shaved thin, and stuffed into a soft pita with tomato, onion, and a distinctive sweet, garlicky condensed-milk sauce found almost nowhere else. Late-night stands across Halifax serve it as the go-to after-bar food.
Why it's made this way: The donair's sweet sauce was created in Halifax by Greek immigrant restaurateurs adapting the gyro for local tastes in the early 1970s, and the Halifax style remains distinct even as it spread to other parts of Canada.
