The PEI lobster supper tradition began in the 1950s at a New Glasgow community church hall, where locals cooked lobster to fund building repairs and it grew into an island institution.

Cold, mayo-dressed lobster meat is piled into a toasted, split-top hot dog bun and served with a side of fries or coleslaw. Roadside lobster shacks and wharf stands sell them all along the island's coast in summer.

Why it's made this way: PEI's cold Atlantic waters support one of Canada's largest lobster fisheries, and the island's community lobster suppers are a distinct local institution.
