PEI supplies roughly 80% of Canada's cultured blue mussels, farmed on ropes suspended in the island's sheltered bays rather than dredged from the seafloor.

Blue mussels are steamed in white wine, garlic, and butter until they pop open, then served in the shell with crusty bread for dipping in the broth. Wharf-side stands and seafood shacks around the island serve them by the bowlful in summer.

Why it's made this way: PEI's cold, nutrient-rich bays are ideal for rope-cultured mussel farming, an industry the island has built its seafood identity around.
