The humblest version is the egg guedille — chopped egg salad in a hot dog bun — while lobster guedilles turn up mostly on the Gaspé coast and the Magdalen Islands in summer.
A hot dog bun is stuffed to overflowing with a cold, mayo-dressed salad of egg, shrimp, lobster, or chicken, topped with shredded lettuce. Roadside cabanes à patates (chip trucks) across Québec serve it alongside poutine and fries.
Why it's made this way: It's a fixture specifically of Québec's roadside chip-truck culture, a casual highway food tradition distinct from the rest of Canada.
