Traditional Québécois tourtière recipes vary so much by region that some Lac-Saint-Jean families make a version stuffed with whole cubed potatoes and game meat, baked for up to 12 hours.

A double-crust pastry pie is filled with spiced ground pork, beef, or game and baked until deeply golden. Christmas markets and Québec bakeries sell individual hand pies as a grab-and-go winter street food.

Why it's made this way: The pie is a French-Canadian tradition dating to early Québec settlers and remains most associated with the province's holiday street markets.
