Centolla season is legally restricted to protect stocks, yet Punta Arenas fishermen still haul the crab from waters just miles from where the Strait of Magellan meets the open Pacific.
Southern king crab is boiled and served straight from the shell or folded into empanadas and gratins, sold fresh off fishing boats and at Punta Arenas's dockside market stalls. Locals eat it simply, with just lemon and bread.
