Centolla is a southern relative of the Alaskan king crab, caught in traps in the cold channels of the Strait of Magellan and Tierra del Fuego.
Sweet king crab meat is folded with onion and a touch of cream into a baked pastry pocket, sold hot from bakeries and market counters around Punta Arenas. It's a richer, seafood twist on Chile's national pastry.
Why it's made this way: The dish exists because centolla is fished locally in Magallanes, where it is fresher and more commonly eaten than anywhere else in Chile, though still not cheap.
