Mote con Huesillo

It's a drink you eat with a spoon: once the syrup is gone, you scoop up the cooked wheat and the whole rehydrated peach at the bottom.
Mote con huesillo layers cooked husked wheat (mote) with a whole rehydrated dried peach (huesillo) in a sweet, cinnamon-scented syrup, served chilled in a tall glass. Street vendors sell it from coolers and carts at parks, beaches, and outdoor events across Chile during the hot summer months.
Why it's made this way: There's a Chilean saying that nothing is 'more Chilean than mote con huesillo,' reflecting how tightly the drink is tied to national identity and the rhythm of summer.
