Hu Jiao Bing (Black Pepper Bun)

The name is a pun that stuck by accident — in the Minnan dialect, the words for 'Fuzhou' and 'pepper' sound almost identical.

A yeasted dough is wrapped around peppery marinated pork and scallion, then slapped onto the inner wall of a clay oven to bake, crisp and charred outside, juicy within.

Why it's made this way: The bun was brought to Taiwan by Fuzhounese immigrants, who adapted an older Fuzhou pastry into a distinctly Taiwanese night market staple.
