Longaniza Boyacense

Unlike most Colombian chorizo, longaniza boyacense is packed into a single long, thin, uncoiled sausage that can stretch well over a foot before it's cut and grilled.

Ground pork is seasoned with garlic, cumin, and annatto for color, then stuffed into a long casing and grilled whole over coals until it blisters. Market stalls in towns like Sogamoso sell it in chunks with boiled potato and arepa.

Why it's made this way: Boyacá's Andean farming towns raised pigs alongside potatoes and corn, and the province's markets built their own distinct sausage shape and seasoning separate from Antioquia's chorizo.
