Alajuela's central park is nicknamed 'Parque de los Mangos' because of the towering mango trees planted around it, which is exactly where vendors have sold the snack for generations.
Unripe green mango is peeled and sliced into strips, then served with salt, lime, and a splash of spicy pickled chilero sauce. Vendors set up carts directly under the mango trees of Alajuela's central park to sell it by the bag.
