Vendors pull and fold the hot taffy by hand over a hook on the cart, a technique that traps air and turns the dark syrup pale gold.

Raw cane sugar is boiled down into a thick syrup, then pulled and folded by hand until it lightens in color and turns chewy. Vendors in Grecia, in Alajuela province, sell it twisted onto sticks at town fairs and markets.

Why it's made this way: Grecia sits at the center of Alajuela's sugar-cane country, and its cane mills have long supplied the raw sugar its fair vendors pull into taffy.
