The bread gets its dark color and deep flavor from molasses baked right into the dough, a legacy of its Jamaican bun ancestry.

A dense, dark loaf studded with candied fruit and raisins, spiced with cinnamon and nutmeg, and laced with molasses. Limón's Afro-Caribbean bakeries sell thick slices, traditionally paired with a slab of cheese.

Why it's made this way: Pan Bon descends directly from Jamaican 'bun,' brought to Limón by Caribbean immigrant bakers and kept alive in the province's Afro-Caribbean bakeries ever since.
