Corvina Frita con Patacones

Vendors score the fish's skin in a tight diamond pattern before frying specifically so the hot oil reaches the bone and cooks the fish through without ever flipping it.

A whole corvina (sea bass) is scored, seasoned, and deep-fried until the skin turns crackling-crisp, then served with twice-fried green plantain patacones and a squeeze of lime. Stalls along Puntarenas' boardwalk sell it fresh from the morning catch.

Why it's made this way: Puntarenas has been Costa Rica's main Pacific fishing port for generations, and whole fried fish sold dockside remains the boardwalk's signature order.
