San José's massive December street fair, Fiestas de Zapote, draws crowds specifically for chorreada stalls that fry them to order over open griddles late into the night.
Fresh corn kernels are blended into a thick batter and poured onto a hot griddle, cooked until lightly browned like a thick pancake. Vendors at San José's Fiestas de Zapote fair fry them to order, served with a dollop of sour cream.
Why it's made this way: The pancake is one of the signature foods sold at San José's Fiestas de Zapote, the capital's biggest annual street-food and carnival fair.
