Istria produces both black and white truffles from the same forests, making it one of the very few places in Europe where you can hunt both varieties.
Diamond-shaped egg pasta, traditionally hand-rolled around a knitting needle, is tossed in butter and shaved fresh with local truffles. Truffle festivals and market stalls in inland Istrian towns like Buzet and Motovun sell it by the paper bowl.
Why it's made this way: Fuži were a festive Sunday pasta in Istrian homes, and pairing them with truffles reflects inland Istria's forests being one of Europe's reliable truffle-hunting grounds.
