The city's gingerbread craft is documented as far back as 1515, and its production rights were personally upheld by Empress Maria Theresa in 1759.

Spiced honey gingerbread, sometimes plain and crunchy, sometimes iced and shaped into hearts and figures, baked in Pardubice and sold from market stalls and bakery counters at fairs across the region.

Why it's made this way: Pardubice's gingerbread craft has centuries of documented history behind it, and the product now carries EU-protected geographical status, meaning only gingerbread actually made in Pardubice can legally use the name.
